The Southern Region of Ecuador is characterized by its religious manifestations and celebrations. Perhaps one of the most important and recognized celebrations, is during the month of August with the procession of the Virgen del Cisne. She is also known as the “Churona” because of her curly hair, an image which is believed to be able to work miracles.
The enormous procession begins on the 18th of august in El Cisne, and walks to Loja on August 20th, where the loyal pilgrims and thousands of people ask for a miracle.
The belief of the miracles of the “Churona” or Virgen del Cisne date back as far as 400 years ago, when the town of Cisne (close to Loja) was going through a period of starvation and misery, until the Virgin appeared, and asked for a church to be built near that site. The church was built and it is known as the Nuestra Señora del Cisne.
The region of Loja has great gastronomy to offer, with dishes that contain corn, meat, fruit and diverse ingredients from the region.
One of the most traditional dishes is the Cecina, which is made from pork meat seasoned for three hours then grilled over coal fire. This dish is served with yucca or mote.
Another well known recipe of the region is Peas with Green Beans, a soup which contains a great deal of ingredients and it is said to restore you.
Another dish is Chafaina, a dish which is popular among the natives and tourists, the mix of meat and pork, make it irresistible for those taste buds that like typical dishes.
