Cañar > What you must see!
Each first of January, the followers of Cañar celebrate the Feast of the Virgin of the Cloud, with a procession to the Franciscan sanctuary, located on the Calvario Hill, to the east of Azoguez.
It is important to state that in Cañar there is an enormous amount of migration. This is why the Virgin of the Cloud is also known as the mother of the absent Ecuadorian; who is in charge of granting a better future for the emigrant.
The Cañar gastronomy, hides a secret from its ancestors, a secret that was well guarded by the nuns, who in the past had access to the Spanish conquistadors.
A typical dish you must taste is the famous “cascaritas” (toasted pork skin). The pig, called “cuchi” by the azuayos and cañarejos, is roasted, resulting in a delicate crunchy skin.
Another dish that is popular is Aguado de gallina, a broth which is prepared with chicken, potatoes and vegetables.
The guinea pig is a typical dish from Azuay and Cañar. This animal which is very well cared for is fed grass. The guinea pig is roasted over charcoal; it is served over golden potatoes and generally eaten with your hands.
